Chocolate Chip Cookie Ice Cream Sandwiches!

There’s only one word that sums up these chocolate chip cookie ice cream sandwiches: YUM! :)

I made these for my sister, Lois’ birthday back in January. This is actually what I planned to do for Abby’s Birthday, but I wanted to make it as a cake instead. Well…it didn’t turn out like that at all! Let’s just say I  ruined it completely.
Everything came out a whole mess. :(  So we thought that next time I would just make individual cookie sandwiches instead of a whole cake  (btw, this is part 1 of Lois’ birthday).

Now put the other cookie on top…


…and lightly press it so that the ice cream is distributed evenly between the two cookies. The cookies are a little fragile and can break if you press them too hard


And there you have it! A chocolate chip cookie ice cream sandwich!


We gave these two cookies to someone (you know who you are ;) )

Chocolate Chip Cookie Ice Cream Sandwiches


2 1/4 cups flour

1/2 tsp. baking soda (+ a few drops of lemon juice)

1/2 tsp. baking powder

1/8 tsp. salt

1 1/2 sticks butter, softened (3/4 cup)

1/4 cup oil

3/4 cups granulated sugar

3/4 cups packed brown sugar

1 tsp. vanilla extract

2 large eggs

1-2 cups chocolate chips

Vanilla ice cream (or any ice cream you prefer really)


In a medium bowl sift together the flour, baking soda (adding a few drops of lemon on top of the baking soda until it sizzles), baking powder and salt, making sure that there are no lumps from the lemon juice. In a large bowl beat butter, oil, sugar, brown sugar, and vanilla extract until creamy. Add eggs one at a time beating well after each addition. Gradually fold in flour mixture. Stir in chocolate chips. Drop by rounded  tablespoon onto ungreased baking sheet. You can also sprinkle some chopped walnuts on top if you want. Bake for 10-12 min. at 350 degrees.

Once you have all you cookies done, let them cool completely before you sandwich them together with a tablespoon and a half (or so) of ice cream. Press the cookies together gently so the ice cream spreads out evenly between the cookies, making sure your cookies don’t break. They are best after they have been at least a few hours in the freezer, or even overnight. (Optional: You can roll the sides of your cookies in mini chocolate chips, nuts, sprinkles, whatever you want)
