So it’s time to honor all dads! What is your dad’s typical breakfast? Does he like a savory breakfast (eggs, bacon…etc) or would he rather go for something sweet (waffles, pancakes, french toast…etc.)?
Sometimes I’m really curious what people eat for breakfast every day. My dad LOVES hot cocoa every single morning, and so do my sisters and I. Of course he’ll eat bacon and eggs and stuff like that, but the hot cocoa is always included in our morning menu no matter what we eat. And we absolutely love it!
On special days like a birthday or something, I’ll whip up a batch of homemade waffles (to die for!) like here. What I really love about homemade waffles– besides the fact that they’re more natural when they’re homemade– is that they are very versatile!
We put almost everything in them like mixed berries, chocolate chips, rum essence…you name it! A recent experiment was to make them fully chocolate, and boy we weren’t disappointed!
Making chocolate waffles brings the waffles to a whole new level of decadence! Not to mention that adding chocolate ganache on top is like…*sigh* too good!
On this occasion, I made these chocolate waffles for one of my sister’s birthday breakfast. We enjoyed them with berries, bacon, and drizzled with honey and some powdered sugar. I mean, chocolate and bacon is like…YUM!
Most likely your dad loves chocolate and bacon. SO, do him a favor and make these for his Father’s Day breakfast. If it’s one thing he’ll remember about that day is these waffles!

Homemade Chocolate Waffles
1 cup flour
1 cup cocoa powder
1 Tbsp. baking powder
1 tsp. salt
10 Tbsp. sugar
1 1/4 cup milk
2 oz. melted chocolate
4 whole egg yolks
2 Tbsp. vanilla extract
1 tsp. rum extract
1/2 cup oil
4 whole egg whites
4 oz. semi-sweet chocolate
1/3 cup heavy cream
1/4 tsp. vanilla extract
1/4 tsp. rum essence
Berries, Bacon, powdered sugar, and honey for serving
In a large bowl sift together all the dry ingredients (including the sugar). Make a well in the center of the bowl. In a separate bowl, mix together the milk, (cooled) melted chocolate, egg yolks, vanilla, rum essence, and oil. Pour the wet mixture into the well of the flour mixture and stir well just until combined. In a small bowl beat the egg whites until stiff peaks. Gently fold them with a spatula into the batter. Cook the batter in your waffle iron according to manufacturer’s instructions. To make the chocolate ganache, place the chocolate in a heat-proof bowl. In a small saucepan heat up the heavy cream just until boiling point. Pour the heavy cream over the chocolate and let it sit for about 2-3 min. Slowly mix the chocolate and heavy cream until you end up with a ganache. Add the vanilla and rum essence & mix. Drizzle the chocolate ganache on top of your waffles and garnish with berries and bacon. Or you can drizzle with honey and sprinkle powdered sugar on top.
